This simple treat is designed for easy clean-up with just two bowls needed for prep and an option to line your baking dish with parchment paper to minimize dishes and maximize indulgence!

Ingredients

1 large egg

1 stick unsalted butter, melted

5 oz Bixby Semisweet Chocolate Baking Chips

1 ½ cup all purpose flour

1 cup brown sugar

1 cup pumpkin puree

½ cup roasted pecans, chopped

2 tsp pumpkin pie spice

1 tsp vanilla extract

1 tsp baking powder

½ tsp cinnamon

Directions:

  1. Preheat the oven to 350 Fahrenheit. In a small microwave safe bowl, melt the butter for 10-20 seconds at a time until just melted.
  2. In a large mixing bowl, combine egg, melted butter, brown sugar, pumpkin puree, and vanilla extract. Mix with a rubber spatula until smooth.
  3. Add flour, baking powder, pumpkin pie spice, and cinnamon. Stir until completely combined. Roughly chop the baking chocolate and pecans and fold into the batter until distributed.
  4. Transfer to a greased or parchment lined 8x8 inch baking dish. Bake for 35-40 minutes, or until a toothpick inserted comes out clean. Slice into 9 squares and enjoy.
